Mississippi Pot Roast - a flavorful and tender beef roast cooked low and slow with ranch seasoning, au jus gravy mix, pepperoncini peppers, and butter. This savory dish is perfect for a comforting family dinner.
Measure out the ranch seasoning mix, au jus gravy mix (if using from a jar instead of 1oz envelopes).
Cut the butter into pieces, measure out ¼ cup pepperoncini juice and grab 6-8 pepperoncinis from the jar.
Prepare the roast
Place the roast in the slow cooker. Sprinkle the ranch seasoning mix and au jus gravy mix evenly over the roast.
Add remaining ingredients
Place the butter pieces on top of the roast. Arrange the pepperoncini peppers around the roast and pour the pepperoncini juice over the top.
Cook the roast
Cover and cook on low for 8 hours, or until the meat is tender and easily shreds with a fork.
Serve
Shred the beef with two forks, mixing it with the juices in the slow cooker.
Serve hot with your favorite sides. Enjoy!
Notes
• Use a good-quality chuck roast. A well-marbled chuck roast will yield the best flavor and tenderness.
• Adjust the heat. If you like a bit more spice, add more pepperoncini peppers or a splash of the juice.
• Serve with mashed potatoes or rice. The savory juices make a delicious gravy to pour over sides.
