I used black beans and mixed chili beans, added corn, used rotel for my tomatoes. I used a can of cream of chicken and a can of creamy enchilada soup and added some taco seasoning packets. Serving it with tortilla chips, cilantro like rice and corn pico. Canโ€™t wait to see how it turns out!

I’m sorry. This was so disappointing. There wasn’t enough of a main flavor. It just tastes like exactly like the stuff you put in it. It made me wish it was something else like chili or beef stew. No one in our family liked it. They can’t all be winners.

If you are on the fence about this combination of ingredients don’t be! My husband and 1 year old loved this! We added a dollop of sour cream. I sliced my potatoes like you would au gratin and maybe next time I would dice them potatoes obrien size. I did not add diced tomatoes because I don’t love them, and did add the can of corn, drained as suggested in notes! Thank you, Kylee!!! xoxo

Actually, that sounds amazing! I’d totally do it. Cook time might need to be longer to allow for the beef to be tender, though.

The starch from the liquid in the beans actually thickens it up. Draining them makes for a soupier consistency.
