Instructions
Get prepped
Finely chop the parsley or green onions. Crumble the blue cheese. Measure out all ingredients.
Make the topping
In a small bowl, stir together breadcrumbs, blue cheese, parsley or green onions, seasoned salt, and cracked black pepper.
1 cup soft bread crumbs, 1/2 cup blue cheese, 1/4 teaspoon seasoned salt, 1/4 cracked pepper, 1 tablespoon parsley
Add the olive oil and mix until the mixture has a stuffing-like consistency. Set aside.

Prepare the pork chops
Season both sides of the pork chops with salt and pepper.
2 large pork chops
Press the crumb mixture evenly over the top of each pork chop, gently patting it down to adhere.
Cook the pork chops
Preheat the oven to 400°F and add olive oil to an oven-safe skillet.
Bake for 6-8 minutes, or until the internal temperature reaches 145°F.
Optional
Switch the oven to broil and cook for a couple of minutes until the topping is golden brown and the cheese starts to melt. Watch carefully to avoid burning!
Remove from the oven and let the pork chops rest for 5 minutes before serving.
Notes
If your pork chops are extra thick, you may need to bake them a few minutes longer.
